It is made with pieces of skate marinated in salt and lemon juice and then rinsed and boiled in just a little water. Using a mortar, two cloves of garlic are crushed with a biscuit or piece of toast, parsley, roasted almonds and pepper. This mixture is mixed with beaten egg and oil, the pieces of skate are dipped into it, and then fried on a low heat.
In Ibiza, many restaurants on the coast serve this magnificent dish next to the seashore.
Ingredients:
ray, potatos, egg, parsley, garlic, fried bread, saffron and olive oil, toasted almond.
Cut and marinate the ray with salt and lemon to remove amonia smell. Cut potatoes in slightly thick slices and blanch them together with the ray cuts. Put the whole in the container to be used to serve. To prepare the sauce, crush toasted almonds, parsley, fried bread, saffron, mix an egg previously whisked and add a little bit of olive oil.
